I’m ALWAYS looking for quick and easy lunches and/or dinners! I have learned to love most vegetables because they help me to feel full and satisfied! This meal idea came from my good friend Carrie!
She laughs because I buy the “expensive” sweet potatoes… but you can always get a normal sweet potato. This was is just so quick and easy to grab.
Her choice in sweet potato… 😉
Like I’ve mentioned before, I usually keep prepared taco meat and roasted veggies on hand… so I just grab one of each to top my sweet potato.
This is a perfect meal for a chilly day in the fall!

We rarely get the opportunity to “get away” as a family. I was super excited when my sister in law Shea invited us up to Boise for the holidays! The boys love road trips and had been looking forward to this for months. I tried to take a lot of pictures to have as memories… I added them to this little video along the way. This was a good 2 weeks! I love my family.
We were able to spend time with Torry’s extended family as well…. it was fun to be with the aunts and uncles that we are close to… as well as meet others for the first time. We celebrated Grandma Lucille’s birthday and also Dave Poulton’s retirement from the military. We have so many reasons to be thankful!
On our way home… there was a big snow and ice storm along our route.
We did our best to go south and under it…. but the way it was moving, we got stuck right in the middle. Obviously to some people this is no big deal… be we are Texans and have very little experience driving on ice. It was super scary! We were driving wayyyy under the speed limit.
This video clip was taking about 10 minutes before we had a huge scare when the car slid into the on coming traffic lane. Torry was able to correct the car after it swerved twice. By the time the car came to a stop, we were facing sideways in the oncoming traffic lane. LUCKILY for us there were no cars coming towards us in that moment. Scariest thing EVER!!! Prayers were heard and answered!
We really wanted to stop for the night but all of the hotels were sold out in the area. After driving another hour to Ft. Stockton, we found the LAST hotel room available. After a good night’s sleep…. we drove the rest of the way home.
What a difference a day makes!!!
My friend Tracey was very excited about this upcoming Wanderlust Yoga Festival that was going to be held in Austin, TX. She heard from a friend that it was simply “magical”! After talking about it a little bit, we decided it would make the perfect backdrop to a girl’s weekend. Up to this point, I still had not met her sister Laurie in person… she was a big part of connecting me to Health Magazine. Needless to say, I was very much looking forward to this get away!
The weather was gorgeous!!! We enjoyed taking our time with each of the vendors… and seeing what they had to offer. I loved the people we met. Everyone was so friendly and genuine. The classes that we chose were perfect. We focused on relaxation, restoration, and meditation. These were all new to me and I learned so much about myself from each one.
Our meditation class took place on a rooftop of one of the yoga studios. It was one of the most powerful experiences. Funny side note… I have been using a yoga dvd at home and realized that the instructor from my dvd was leading the meditation class. I love this quote! I walked away really wanting to focus on the positive attributes of others. It’s so easy to point out what annoys & frustrates us. The negative we see in others is what we don’t like about ourselves. It feels much better inside when we are looking for the good… the positive… and what I would refer to as the light of Christ in our friends and family.
As always… after a weekend away… it’s great to be back in Houston with my family.
Yesterday, I spent the day with Torry celebrating 19 years of marriage! He said he thinks of it as celebrated “19 football seasons together”… LOL! Maybe THIS is the year we will make it to the Super Bowl! 😉
This summer I trained with a group of friends to run in the Ragnar Trail Relay Race. It’s been a while since I’ve participated in a big event and this one sounded so fun!! I’m not a big “camper” and I don’t necessarily like the great outdoors… but because it involved running I was up for it! The race consisted of 127.2 miles of challenging trails with a team of 8 runners over a 2 day period of time! Coming from the flat roads of Houston, I’m not sure I could have adequately prepared myself for the crazy terrain! There were so many rocks on the narrow trails that my friend Emiley wanted to rename the race to “ROCKNAR”… lol!
I was able to complete my 3 legs of the race and I had amazing experiences along the way. I wish I could go into all of them… but I’ll share one. At a certain point, I had to run approximately 5 miles in the middle of the night practically alone. I did pass about 5 or 6 people, but for the most part it was me and nature! Leading up to this part of the race, I was very nervous. During my time out on the course, I used a headlamp to guide me along the path. I had to pay very close attention to where I was running so I wouldn’t trip on a tree root or twist an ankle on the rocks. I couldn’t help but compare the challenge of this race to the trials we have in life.
Sometimes we don’t have the power to change what we are up against… and we can’t really see too far ahead as to how it will all work out… but if we take things slow and focus on one step at a time… we will be guided through the hard times and know the direction we need to go. I believe that my Heavenly Father was with me that night. I’m grateful for this very tangible experience where I felt his love for me in a very real way.
Finally!! After 3.5 years… we got to hang out with our friend and dietSNAPS creator Tracey Suppo in the flesh!!!
We became fast friends after my sisters in law and I discovered her food journaling iPhone app. It played a huge role in documenting our weight loss journey. After years of talking on the phone, texting and facebooking…. We finally planned a weekend to meet in person. It was everything I imagined it would be!
Lots of food, laughs, discussions, tears, and even hay bales!! … in TEXAS of all places?!!!?

The past two years have been a blur! I have had so much fun doing so many things, but to be honest… it has all happened so fast! This summer my goal was to slow things down. Now that my boys are older, I realize I only have a few summers left with them at home. Ty is starting his junior year and Kody will be a freshman! So this summer was all about them! Continue reading
