Weight Watcher Girl – Cheesy Pizza Cabbage Casserole

Early last year I was introduced to the Weight Watcher Girl blog…. and I love it! She has an amazing transformation!!! You have to check out her videos on her YouTube Channel.


As soon as I saw her posting about her cabbage casseroles… I knew I wanted to try them!!! I finally got around to it tonight and it was soooo good! You can get the full recipe by clicking here…  Cheesy Pizza Cabbage Casserole

Vegan Quinoa & Sweet Potato Chili

Back in January, I hosted a “Healthy Eats” Recipe Exchange at my house. I am always looking for new and healthy ideas…

I am a pretty routine person, so I have to force myself to venture out where the kitchen is concerned. My friend Pam shared this dish and I loved it! I’m not a huge meat eater… so it’s cool to know that I’m getting a protein dish minus the meat! :)

I’m not a big fan of cooking….. so it’s always an adventure….

And the final result was amazing!!! Definitely something I can add into my regular routine. I like to make meals ahead of time and store them in the freezer for quick options throughout the week! This definitely works for that purpose!

Butternut Squash Pizza

I saw this idea on Roni’s Green Lite Bites site and knew I would be trying it! So glad that I did because it is really really good! :)


Preheat the broiler!

Slice the butternut squash into 1/2 inch thick rounds… You’ll be happy to know that you can leave the skin right where it is… no peeling required!


Spray the cookie sheet with Pam and place under the broiler for approx 10 mins… I watched this like a hawk so they wouldn’t burn…


Flip them over and smear some pizza sauce, turkey pepperoni, dash of italian seasoning and a little mozzarella cheese…

Place under the broiler for 2 or 3 mins… watch closely!


Now dive in to your new “not-so-guilty” pleasure! Sooo good and so satisfying! :)  Thanks Roni for the awesome idea!


Swiss Turkey Melt

This is quickly becoming my favorite sandwich. Feels like “comfort” food!

2 slices of Sara Lee 45 Cal Bread, 6 slices of Oscar Mayer Delifresh turkey breast, 1 slice of Kraft fat free swiss cheese, and either fresh spinach or green peppers (or whatever veggies you have on hand!)




Enjoy! (You can add a side of fresh fruit, or Roasted Veggies!)
