Crockpot Lasagna


1 lb ground beef (80/20)

1 onion

2 cans diced tomatoes (15 oz)

italian seasonings to taste

7 oz fat free grated mozzarella cheese

7 oz ricotta cheese

2 T grated parmesan cheese

2 T parsley

1 egg

6 lasagna noodles


Started out by sautéing the diced up onion… and browning the meat… then I added the 2 cans of tomatoes and italian seasonings. (REALLY wish I would have added garlic….. what was I thinking??) I let this simmer while I mixed up the cheeses….

Mixed up all of the cheeses, the parsley and the egg until creamy….


Then I added a cup of the meat sauce to the bottom, followed by broken noodle pieces, followed by the cheeses. I repeated this until I ran out of supplies… 😉 Then I turned my crockpot on High for about 4 to 5 hours.

Serving size is 1 cup :)
