Roasted Veggies

Gone are the days of steaming broccoli and cracking open a can of green beans…. that used to be the only way I got in my veggies. I have really fallen in love with roasted veggies. This is one of my favorite combinations because they are soooo tasty and colorful! I preheat the oven to 425F and spray the bottom of the roasting pan. You don’t have to use this exact amount or this exact combination of veggies, but this is what works for me. I try to make a big batch that I can use for several meals.

Yellow Squash, Zucchini, Red Peppers, and Purple Onion

Dice them all up!  I love using my Pampered Chef knife.

Mix them all together and spread evenly over the pan. Spray the tops of the veggies with Pam. Sprinkle pepper and kosher salt to taste.

Roast in the oven for approximately 25 to 30 minutes! That’s it!  Very simple and a great way to add some variety!

I store them in small containers in the freezer to use throughout my week. They can be added to eggs, chili, or as a side/filler to any meal! Enjoy! :)
