Spaghetti Squash With Alfredo Sauce, Pico, and Turkey

This is a super quick meal to throw together if you happen to have these on hand. Because I love spaghetti squash, I try to prepare one at least every other week and then I store it in the fridge so I can easily bulk up my meals. A few days ago, I was rummaging around trying to decide what sounded good… and I came up with this combo. I ended up loving it so I wanted to share.   :)

You will need:

1 cup spaghetti squash

1/4 cup alfredo sauce

1/4 cup (or more) pico

4 oz. cubed Jennie-O pre cooked turkey breast

pepper to taste

Combine the spaghetti squash and alfredo sauce and heat in the microwave for 90 seconds…

Add pepper to taste and stir in as much pico as desired…

Add the cubed turkey and heat in the microwave for an additional 60 seconds…

That’s it… simple and quick  :)

Cheesy Eggs With Pico

The Supplies:  small skillet, prepared pico (i just pick this up in the produce section, but feel free to make your own), Laughing Cow Chipotle Cheese wedge, and 2 eggs. (or half cup of egg beaters)

Begin by scrambling eggs like normal…. I keep my heat on med-high, so they don’t cook too fast.

As it’s cooking…. dump in desired pico 😉

Add in the cheese wedge…

Add additional pico and pepper to taste! This is soooo good!! :)

Shredded Chicken Taco

This is my new lunch addiction! It’s quick and easy if you do just a little prep work ahead of time. I LOVE Cyndi’s Salsa Verde Crockpot Chicken. I make up a batch of it, and then store half cup servings of the shredded chicken in my freezer to use during the week for a quick lunch!

Gather all of the ingredients together… small carb balance mission tortillas, prepared pico de gallo, chipotle flavored laughing cow cheese, and a serving of the salsa verde chicken. Since the chicken is frozen… I heat it up in the microwave for approximately 3 minutes…

While the chicken is warming, I spread the laughing cow cheese on the tortilla…

Then layer it up!

I love pico!

This makes a great lunch!
